Ingredients

1/3 cup chopped pecans (small bag)
1/3 cup parmesan cheese
1/3 cup Italian bread crumbs
salt and pepper
white vinegar
Gallon zip lock bag
Oil (olive for me)

Fillet fish and remove any red meat.
Preheat nonstick skillet with enough oil to coat the bottom
Take a rolling pin or meat tenderizer and smash the pecans into small pcs. I cut a small hole in the bag to release any air and smash them in the bag.
Combine the pecans, bread crumbs and cheese in the zip lock, set aside
Pour white vinegar on a paper towel and pat the fillets, salt and pepper fillets then add them to the zip lock bag.
Shake well to coat the fillets.
Place fillets in skillet for 3-4 mins per side depending on thickness.
Serve with cheese grits, hush puppies and a few cold ones.
Works well with flounder or any other whitefish.
