Four parts white corn meal
One part pancake mix
Minced onion
Egg(s) to bind
Just enough water to make a thick batter that won't slide out of a spoon

(You might want to add a little salt or sugar)

Use a small spoon and drop spoonfulls into hot (300+) oil
Eat with butter and honey
Serve with fried fish

It seems like you could use it as a beer batter on fish as well?

Try this--House of autry hush puppy mix. Follow directions except break a egg and add 4-6 packs of splenda in the batter. Almost forget, get the mix with oinions in it. You can even add some corn.
