Does anyone smoke blue fish??
I do and also make a blue fish salad to put on crackers.
To smoke the bluefish filet, I use a charcoal smoker.

SMOKED FISH
Leave the skin on the fish filet.
Sprinkle with garlic powder, season-all, and black pepper.
Place filet on rack (skin side down). Place larger filet closer to the
heat source. Smoke untill well done.

FISH SALAD
Cool overnight in refrigerator.
Remove skin and all dark meat from filets.
Chop or flake the filets to yield 2 cups of fish
Chop and add: 1 and 1/2 c. celery l c. finely diced tomatoes
1c. chopped lettuce 2/3c. relish *2Tbsp. parsley
Mayonnaise measured to your liking

Okay this is how I do it what is your recipe for smoking Blue Fish???? :chef:

I bleed them in the livewell on the way back to the pier (critical).
fillet
Soak in milk, soy sauce and a little teriyaki one hour
Dry the fillets
very light Old Bay dusting, and heavy cracked black pepper

Propane BBQ with mesquite chips over left burner set on low (180 on the gauge). Fillets on right side for 3 hours. Refresh chips once.

I tried to smoke bluefish once, but no matter how hard I drew on it the dam thing keep going out::cool:
