OK, caught some nice Spanish Macks..... The problem is I have no idea how to cook these babies??? The first 4 I brought home yesterday I felled,,, didn't seem ness. so todays catch, all 15, I just cut the head off, gutted them and cut the tails off. They are all cleaned,,, just don't know what to do now??? Any help would be great!!!

Come on guys,,, you mean to tell me that know body know how to cook these Spanish Macks? I was told to grill them??? Is there any other ways?

Not sure, never cooked them before, hell, never even caught one before, but you may want to check out the Receipe board to see if there are any thoughts over there...hope someone can help you out.

Sorry about that. I just realized you posted this on that board. I saw this posted on the main page and thought I would respond. Don't I feel like an idiot :-(

soak em in zesty italian dressing 2 or 3 hours and grill. Delicious

Lip smacken good.... Put them on the grill with the zesty italian dressing and some on the grill with just butter and onion chives,,, very good... now I'm going out to controle the population of Spanish Macks this weekend...

My favorite to date is to fillet them, leave the skin on, and follow Pointn' Dog's directions below...:yes:

From Pointin' Dog:
"As for grilled Spanish, I like mine on the grill with nothing more than salt and pepper. I keep the skin on and grill the fillets skin side down. Grill for eight minutes on medium heat (make sure the grill is pre heated) and then take two spatula's and slide the fillet right off the skin and onto a plate. Simple, beautiful, healthy, and delicious."


I don't think you can go wrong with fresh Spanish macs.:thumbup:

Take the whole cleaned fish and grill it on top of soaked cedar shingles. Stuff the body cavity with herbs, salt/pepper,onion,lemon, garlic, and a little olive oil. Cook on a low indirect heat for about an hour and it will be AWESOME!

Sp Macks are really good deep fried, too. Fillet em, skin em, cut out the dark meat, coat with batter (I like tempura) and drop them in 350 degree oil. They should really be cooked either the day they are caught or the next day, if possible. Malt vinegar or salt and pepper is all I usually put on them once they are fried.:D
