View Full Version : Easy Fried Rockfish Nuggets

Fillet and skin and rockfish into fillets. Cut most of dark bloodline out of fillets. Take a bag of UTZ Old Bay Crab Potato Chips and cut small hole in top of bag and get all air out of bag and crush chips until almost powder form. Use rolling pin or whatever works for you. Some people pour chips into a food processor and really get them cut down. Mix in a little flour or seafood breader to absorb some of the grease from the chips. Cut rockfish into 2 inch nuggetts and dip them into milk or egg and then batter with crushed chips and fry. They will disappear in a matter of minutes!!!! Serve with cocktail sauce!!!!

Sounds great but give these a try
Grind up Capt crunch in a blender till all the big chunks are gone
Cut up rock into chunks, dip in egg wash then CC mix
Deep fry for 3-4 min and dip in sweet honey mustard sauce
I do this at parties and they are gone before the next batch comes out of the fryer
Even my kids scarf it up like candy

good recipe!

I added Tobasco to the egg wash, and blackened redfish magic to the batter mix, came out great, the kids loved it!

Some good eating. I call it ROCK candy,anything you mix them with is good. I'm always trying something diffrent.

Tried it this past weekend and the kids ate them like popcorn...they could not get enough. Thanks for sharing! Great Receipe

We do the rockfish bites also, when they are done try some different cups of sauce:

Heinz 57
honey mustard
bbq
teriyaki
texas pete

dip em in and enjoy. Have to give the chips a try thanks!

I tried the "UTZ Old Bay Crab Potato Chips" recipe with a few white perch fillets and strips of mackerel I caught last Wednesday. Excellent recipe, very good texture to the covering when cooked, an just spicey enough not to be over bearing. I used a rolling pin to break them up. I'll second the need for a spoon full of flour to counter the grease in the chips. Will definitely do it again.

The Utz sounds good, I will have to try that. I have been cutting rock fish into chunks soaking them in hooters wing sauce then rolling them in corn meal and deap frying them.

I'll try these breading recipes, they sound like a winner based on the responses.
Try some buffalo wing sauce with your favorite nugget recipe. It's the best dipping sauce I've come by.
