There used to be a great restaurant in Rcihmond by that name (Run by a Frenchman/"frog" and a self described Va. "redneck")....anyway, I once had grilled cobia chunks with Parmesan butter there....simple and excellent...as easy as it sounds....They also did an excellent roast red pepper and crabmeat soup...assume cobia chunks would work well too
